91 Point Wine Enthusiast
The Paso Robles AVA delivers a classic, rich Cabernet Sauvignon with bold, concentrated flavors. Slow Press Cabernet is aged in oak barrels for 11 months, and delivers notes of dark fruits and blackberries that complement robust and velvety tannins.
This wine undergoes malolactic fermentation and is then aged in American oak barrels for 9 months. This process delivers bold, concentrated flavors of dark fruits, blackberries and cassis, with notes of tobacco and leather. Its robust structure and firm tannins grip the taste buds, leaving a velvety finish.
Slow Press wines are a tribute to the true craft of wine making. Our vintners know that great wines are worth waiting for, so they’ve slowed down the process from start to finish.

F. Paul Pacult-Kindred Spirits "Chivas’s top-notch character is at once powerful and understated; hats off to the Chivas master blender; this is Scotch blending at its near-best.” **** Highly recommended
Chivas is a blend of many different malt and grain Scotch whiskies, matured for at least 12 years. This rich, smooth blend balances style with substance and tradition with a modern twist.

The Chivas Collins: 2 x slices of green apple (Granny Smith) 50ml Chivas 12yr 100ml Lemonade 50ml Soda Water 1 x Lime wheel 1. Place the apple slices at the bottom of the glass and pour Chivas over them. Allow to stand for a few minutes. The slices of apple are placed in first to interact with the whisky, opening up the orchard fruit signature notes within the Chivas taste profile. 2. Fill with large ice cubes. 3. Slowly pour the lemonade. The citrus balances out the honey notes of the whisky. 4. Give it a stir. 5. Top with soda. The soda water lengthens the drink further, making it less sweet and adding an extra touch of fizz. 6. Garnish with a lime wheel and serve with a long clear straw.
